Oven-Baked Sweet Potato Fries

Makes 4 to 6 servings

1. Preheat the oven to 400°F. Line a baking sheet with aluminum foil.

2. Peel the sweet potatoes and cut them lengthwise into 6 or 8 long wedges, depending on the size of the sweet potato.

3. In a large bowl, combine the sweet potatoes, oil, salt, and pepper. Toss until the sweet potatoes are well coated.

4. Evenly space the sweet potatoes in one layer on the prepared baking sheet. Bake for 35 to 40 minutes, until light brown and crispy.
