Makes 1½ cups (6 servings)
1. Place the tomatillos, onion, garlic, salt, and hot sauce in a blender. Process the ingredients until they are well combined, about 1 minute.
2. Add the cilantro and puree until the salsa is very smooth.
3. Serve immediately, or cover and refrigerate for up to 2 days.
Sometimes called a Mexican green tomato, a tomatillo looks like a small green tomato with a papery covering or husk. It is in the same family as a tomato but has a distinctive tart flavor.
