Royal Christmas Gingerbread Biscuits
Makes 20 chewy, soft, delicious cookies
Ingredients Cookies:
- 2 cups of flour
- ¾ cup of unsalted butter
- ½ cup dark brown sugar
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- ¼ teaspoon fresh grated ginger
- ¼ teaspoon salt
- ¼ teaspoon fresh grated orange zest
- 1 egg
- ¼ cup pure maple syrup
Ingredients Cookie Topping:
- ¼ cup white sugar
- ¼ cup cinnamon
Instructions:
- Over low heat in a saucepan, melt butter, sugar, grated ginger, and syrup and set aside to cool.
- When cool, add egg and whisk together all the liquid ingredients in a large bowl.
- Combine all dry ingredients in a medium bowl.
- Stir dry ingredients into the large bowl of liquid ingredients.
- Roll into a ball, wrap in plastic wrap and chill for 40 minutes in the refrigerator (the more the dough is chilled the less the cookies will spread).
- Line cookie sheet with parchment paper.
- Combine sugar and cinnamon for the topping.
- Roll dough into Ping-Pong-sized balls and roll in topping.
- Preheat oven to 350 degrees F and bake for 10-12 minutes. They will be soft inside. Do not overcook for the best chewy, soft texture.
