A Good Housekeeping article entitled “Good As Ever Old-Fashioned Dishes Made to Fit Our Times” redeveloped some favorite old recipes to meet wartime needs. Extended with soy flour, a loaf similar to this one provided lots of protein while saving meat points.
1 ½ pounds ground chuck
¾ cup soy flour
⅓ cup tomato juice
1 large egg, lightly beaten
¼ cup finely chopped onion
¼ cup finely chopped green bell pepper
¼ cup ketchup
2 tablespoons prepared horseradish
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 teaspoon salt
¼ teaspoon ground black pepper
Heat oven to 350°F. Grease a 9-inch loaf pan.
Combine chuck, soy flour, tomato juice, egg, onion, bell pepper, ketchup, horseradish, mustard, Worcestershire sauce, salt, and pepper in a medium bowl.
Spoon meat mixture into greased loaf pan and bake until center feels firm when gently pressed—about 1 hour. Cool in pan 5 minutes. Remove to platter; slice crosswise into 8 pieces and serve immediately.
