HAM LOAF WITH MOLASSES

Corn flakes contribute vitamin B and the molasses adds some iron to this easy-to-make loaf. This is a thrifty way to use the leftovers from a holiday ham and the chilled leftovers from the loaf make an excellent luncheon meat for sandwiches the next day.

¾ cup corn flakes, crumbled

½ cup milk

1 large egg

2 tablespoons molasses

¼ teaspoon ground cloves

¾ pound ground ham

½ pound ground pork

Combine corn flakes, milk, egg, molasses, and cloves in a medium bowl. Set aside 5 minutes.

Preheat oven to 350°F. Grease an 8-inch loaf pan.

Add ham and pork to corn flake mixture and stir with a fork until combined; pack into greased pan.

Bake until a meat thermometer inserted in center of loaf registers 170°F—50 to 55 minutes. Cool in pan 5 minutes. Carefully remove to serving platter and serve immediately or cool 20 minutes, cover, and refrigerate to serve cold.
