BEEF VEGETABLE BURGERS

The addition of vegetables to these burgers gives them a lot more flavor than the usual “just-meat” variety.

¾ pound ground beef

1 cup grated potato

½ cup grated carrot

¼ cup finely chopped onion

¼ cup finely chopped red or green bell pepper

1 large egg, lightly beaten

2 tablespoons ketchup

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon ground black pepper

2 teaspoons vegetable shortening or butter (or a mixture)

6 sandwich buns, optional

Combine beef, potato, carrot, onion, bell pepper, egg, ketchup, chili powder, salt, and black pepper in a medium bowl. Shape into 6 burgers.

Heat 1 teaspoon shortening over medium heat in a large heavy skillet. Add burgers and cook 10 minutes. Add remaining shortening; turn and cook until both meat and potato are cooked.

Serve on sandwich buns, if desired.
