OIL AND VINEGAR DRESSINGS

A 1942 Wesson oil ad helps an aproned wife escape “salad-sameness” with a “Quik-Change” recipe that offers a basic dressing recipe plus add-ins for different salads—pickle relish for green salad, honey for fruit salad, horseradish for mixed salads, and tomato juice for seafood salads. Here is a similar “quick change” for your salads.

¼ cup cider or wine vinegar

½ teaspoon dry mustard

½ teaspoon salt

½ teaspoon sugar

⅛ teaspoon ground white pepper

½ cup vegetable oil

Combine the vinegar, mustard, salt, sugar, and pepper in a ½-pint jar with a tight-fitting lid; cover and shake.

Add the oil; cover and shake well.

Variations: Add 3 tablespoons of any of the following—pickle relish, honey, horseradish, tomato juice—and shake until combined.
