HAM AND GRATED CARROT SALAD

Salad is a nice alternative to sandwiches for lunch. It can be packed in a paper cup, covered with a double layer of wax paper that is held in place with a rubber band. The addition of some cubes of leftover ham to this classic salad makes it a good main dish for a packed lunch.

2 tablespoons mayonnaise

1 tablespoon corn syrup

1 tablespoon finely chopped green bell pepper

⅛ teaspoon ground black pepper

2 cups coarsely grated carrots

½ cup cooked ham, cut into ½-inch pieces

4 leaves lettuce, rinsed and crisped, optional

Combine the mayonnaise, corn syrup, bell pepper, and black pepper in a medium bowl. Fold in carrots and ham.

Divide carrot mixture onto 4 salad plates lined with lettuce, if desired, or pack for lunch box.
