Nonna’s Amaretti Cookies

(Naturally gluten free!)

INGREDIENTS:

2 1/4 cups almond flour

1 cup sugar

2 large egg whites

1/4 teaspoon cream of tartar

1 tablespoon amaretto liqueur (optional!)

1/2 teaspoon almond extract

1/2 cup powdered sugar (for rolling dough)

 

STEPS:

1. Set the oven to 325 degrees.

2. In a medium bowl, mix together the almond flour and sugar. Set aside.

3. In a large bowl, beat egg whites and cream of tartar together until soft peaks form. (The egg whites should form a peak that curves as gracefully as the neck of a swan, cuore mio.)

4. Fold the almond flour mixture into the egg whites, add amaretto and almond extract midway through. Stir lightly until a dough is formed.

5. Hand roll the dough into 1-inch balls. Roll each ball in the powdered sugar and place 2 inches apart on a parchment-lined baking sheet.

6. Bake at 325 for 25 minutes, until the base is golden brown and the tops begin to crack.
