Persillade (pronounced pehr-si-yahd) is a traditional French condiment that improves the taste of anything it touches (and gets bonus points for packing two of my favorite ingredients, parsley and garlic, into every drizzle). It’s a favorite with my kids, who slather it on everything and consider it a treat. The longer you let this stuff sit in the refrigerator, the better it tastes. Raw parsley is so much more than a benign plate decorator; it’s loaded with antioxidants and vitamins, especially vitamin K, which is essential for blood and bone health.
Makes 1½ cups
Combine all of the ingredients in a bowl. Cover and refrigerate until ready to use. The persillade will keep refrigerated for 4 to 5 days.
