Candied Nuts

A countertop staple in my household, these candied nuts do double duty as a source of nutrition and as a sweet, satisfying treat. If I’m heading to a meeting or a workout and need a power boost, I throw some of these into a cup and snack on them en route. One study demonstrated that people who eat nuts on a regular basis have a longer life span. One thing’s for certain: You won’t die of hunger if you snack on these. They’re fiber-filled, and you’ll feel like you’ve had dessert when, in fact, you’ve done your body a favor. Use coconut nectar, if you like, because it is lower on the glycemic index, but I stick with maple syrup.

Makes 5 cups

In a large bowl, combine all of the ingredients until well incorporated. Pack onto two dehydrator trays lined with nonstick dehydrator sheets, allowing the nuts to touch one another. Dehydrate at 118°F until dry, 20 to 24 hours, removing the nuts and flipping them midway through dehydrating, until crisp.

Alternatively, you can bake the nuts: Preheat the oven to 350°F degrees. Line two baking sheets with parchment paper.

Spread the nuts on the sheets and bake, stirring midway through, until fragrant and golden, 15 to 20 minutes.

Let cool, then break the candied nuts into clusters. Store in an airtight container for up to 1 month.
