Makes 12 truffles
In a food processor, process the dates until finely chopped (or finely chop by hand). Add the tahini, mesquite powder, ashwagandha, and salt, and process until incorporated; the mixture will look like large grains of sand. Alternatively, put the ingredients in a bowl and mix with a wooden spoon until incorporated.
Using damp hands, press the mixture into a cohesive dough and roll into 12 balls. Chill slightly, if desired, before serving. Store in a single layer in an airtight container for up to 2 weeks.
