Crumble

Use any combination of apples and pears you like, then top with our granola bars in any flavor your heart desires—a premade topping just waiting to crown a dish of spiced fruit and other goodies. In addition to helping absorb the fruit’s natural juices, the coconut flour adds great texture and taste in combination with cinnamon and nutmeg. Don’t peel the fruit. Over half the fiber in an apple comes from the skin, so leave it intact. I’m partial to our Cranberry Granola bars here—the way the tart dried fruit contrasts with the sweet apples is dessert heaven.

Serves 6 to 8

Preheat the oven to 375°F. Spray a 9-by-13-inch baking dish with coconut oil spray or baking spray and set aside.

In a large bowl, toss together the apples, pears, yacon, coconut flour, coconut palm sugar, cinnamon, and nutmeg. Transfer the mixture to the baking dish and bake until the fruit releases some of its liquid, 15 to 20 minutes.

Meanwhile, in a medium bowl, toss the crumbled granola bars with the oil and salt. Sprinkle the granola mixture over the top of the fruit.

Reduce the oven temperature to 350°F and bake until the apples are softened and the granola is fragrant and golden, 15 to 20 minutes. Serve warm or at room temperature, topped with Sweet Coconut Cream.
