Remember mock chopped liver? The nut- and vegetable-packed dip is baaaack! Thanks to its rich taste and party-pleasing personality, this is one throwback recipe I’m happy to usher into the modern era. For such a tiny seed, the sunflower packs in loads of vitamins and minerals, from vitamins E and B to manganese, copper, and folate. Tahini adds richness and more of the sesame seed’s good health properties, including a surprising dose of calcium. The lemon is super-important here; if you store the dip in the fridge, add even more just before serving to further brighten the dip’s flavor.
Makes 3 cups
In a blender, combine all of the ingredients and process until smooth, 15 to 20 seconds. Season with additional lemon juice, garlic, and salt. Transfer to a bowl and garnish with parsley. The dip will keep, refrigerated in an airtight container, for up to 1 week.
