Makes 4 to 6 servings
1 onion, chopped
2 T. oil
2 cloves garlic, minced
16-oz. can crushed tomatoes in purée
1/4 t. red pepper flakes
3/4 t. salt
1 lb. medium shrimp, cleaned and cooked
12-oz. pkg. vermicelli, cooked
In a skillet over medium heat, sauté onion in oil until tender, about 5 minutes. Add garlic; cook and stir for 30 seconds. Mix in tomatoes, red pepper flakes and salt; reduce heat and simmer for 10 minutes. Add shrimp; cook over low heat for 4 minutes, stirring occasionally. Stir gently; serve over vermicelli.
