Makes 6 servings
1 lb. ground pork sausage, browned and drained
8-oz. plus 3-oz. pkgs. cream cheese, diced
1 bunch green onions, chopped
1 green pepper, diced
28-oz. jar spaghetti sauce, divided
12-oz. pkg. lasagna, uncooked
1-1/2 c. shredded mozzarella cheese
Brown sausage in a skillet over medium heat; drain. Add cream cheese; stir over low heat until melted. Stir in onions and green pepper; remove from heat. Spread half of spaghetti sauce in a lightly greased 13"x9" baking pan; set aside. Cook lasagna just until tender; remove from heat but do not drain. Lay lasagna flat, one strip at a time; spoon one to 2 tablespoons sausage mixture at one end. Slowly roll up lasagna; place in baking pan seam-side down. Repeat with remaining lasagna. Top with remaining sauce and mozzarella cheese. Bake at 350 degrees for 15 to 20 minutes, until bubbly and cheese is melted.
A pat of homemade garlic butter really adds flavor to warm bread or steamed vegetables. Blend equal parts of softened butter and olive oil, then stir in finely chopped garlic to taste…so easy!
