Makes 4 servings
1 onion, chopped
1 T. oil
1 lb. ground beef
1 t. salt
1/8 t. pepper
3 c. cooked spaghetti, divided
14-1/2 oz. can diced tomatoes
12-oz. pkg. shredded Cheddar cheese
Sauté onion in oil in a skillet over medium heat. Add beef and cook until browned. Drain; stir in salt and pepper and set aside. Layer one cup spaghetti in a lightly greased 13"x9" baking pan; top with beef mixture. Layer with remaining spaghetti and tomatoes; sprinkle with cheese. Cover and bake at 350 degrees for 35 minutes; uncover and bake for an additional 10 minutes.
