2. One-Pot Classic Chicken Noodle Soup

Take a stockpot and combine broth, chicken, water, and one teaspoon of salt. Bring it to a boil but keep skimming off the foam from the surface with a large spoon. Reduce the heat to medium-low and simmer it for 5 minutes, skimming as needed. Add garlic, onion, celery, carrots, and parsley. Simmer partially covered until all the chicken is cooked through, about 25 minutes.
Remove both parsley and chicken from heat and discard the back and neck. Let it cool. Then tear meat into convenient bite-size pieces. Skim fat.
Return the broth to a boil and finally add pasta and simmer it for 5 minutes. Stir it 3 cups chicken and reserve the remaining chicken for another use. Season the soup with salt and pepper. Garnish with chopped parsley before serving.
