9. Bacon-Wrapped Pork Tenderloin

Heat the oven to 400° F. Pat the pork dry with paper towels. Season it with ½ teaspoon of the salt and ½ teaspoon of pepper. Sprinkle the pork with the thyme and wrap with the bacon. Heat the oil in a large skillet over medium heat. Add the pork and fennel to check if the pork is tender. Season it with the remaining pepper and salt. Cook the pork for 2 minutes per side of the pork. Add the apricots. Transfer the skillet to oven, roast for 15 to 20 minutes. Let it rest for another 5 minutes. Slice the pork and serve with apricots.
