To make the chocolate fondue, place the chocolate in a heatproof bowl. Bring the cream to a simmer in a medium saucepan and set it over a campfire or on a medium-high grill and pour over the chocolate. Let it stand for 5 minutes. Whisk it until smooth. Whisk in the bourbon too. To make the skewers, thread the bread, marshmallows, and bananas onto eight skewers. Toast it over the campfire. Serve it with chocolate fondue for dipping.
