9. Traeger Smoked Beef Roast

  1. Turn the Traeger onto the smoke setting.
  2. Rub the beef with barbeque rub until well coated, then place on the grill.
  3. Let smoke for 4 hours while flipping every 1 hour.
  4. Transfer the beef to a pan and add the beer. The meat should be 1/2 way covered.
  5. Braise the beef until fork tender. It will take 3 hours on the stovetop and 60 minutes on the instant pot.
  6. Remove the beef from the ban and reserve 1 cup of the cooking liquid.
  7. Use two forks to shred the beef into small pieces, then return to the pan with the reserved braising liquid. Add BBQ sauce and stir well, then keep warm until serving. You can also reheat if it gets cold.
