14. Brined Smoked Brisket

Make the brine by melting the sugar and salt in 6 quarts of hot water.

Allow to cool at room temperature and place the brisket in the solution.

Place in the fridge and allow to marinate for 12 hours.

Remove the brisket from the brine and pat dry with a paper towel.

Sprinkle with the Traeger Beef Rub and massage until all surfaces are coated.

When ready to cook, fire the Traeger Grill to 2500F.

Close the lid and heat up for 15 minutes.

Place the brisket on the grill grate and cook for 4 hours.

After 3 hours, double wrap the brisket in foil, turn the temperature to 2750F and cook for another 3 hours.

Unwrap the brisket and grill for 30 minutes more.

Remove the brisket from the grill and allow to rest before slicing.
