16. Smoked Texas BBQ Brisket

Trim the brisket from any membrane and lose fat.

Trim the fat side to ΒΌ inch thick.

Season all edges of the brisket with the BBQ rub and allow to rest for 30 minutes inside the fridge.

When ready to cook, fire the Traeger Grill to 2750F.

Use mesquite wood pellets when cooking.

Close the lid, then preheat for 15 minutes.

Place the brisket fat side up on the grill grate and cook for 5 hours or until the internal temperature reaches 1650F.

Once cooked, remove the brisket from the grill and allow to rest before slicing.
