30. Smoked Longhorn Cowboy Tri-Tip
3 lb. tri-tip roast

Preheat the grill to 180°F with the lid closed for 15 minutes.

Meanwhile, rub the roast with coffee and beef rub. Place the roast on the grill grate and smoke for 3 hours.

Remove the roast from the grill and double wrap it with foil. Increase the temperature to 275°F.

Return the meat to the grill and cook for 90 minutes or until the internal temperature reaches 135°F.

Remove from the grill, unwrap it and let rest for 10 minutes before serving.
