30. Smoked Longhorn Cowboy Tri-Tip

Ingredients:
3 lb. tri-tip roast
1/8 cup coffee, ground
1/4 cup Traeger beef rub
Directions:
  1. Preheat the grill to 180°F with the lid closed for 15 minutes.
  2. Meanwhile, rub the roast with coffee and beef rub. Place the roast on the grill grate and smoke for 3 hours.
  3. Remove the roast from the grill and double wrap it with foil. Increase the temperature to 275°F.
  4. Return the meat to the grill and cook for 90 minutes or until the internal temperature reaches 135°F.
  5. Remove from the grill, unwrap it and let rest for 10 minutes before serving.
  6. Enjoy.
