35. Supper Beef Roast

Rub the roast with vegetable oil and place it on the roasting fat side up. Season with prime rib rub, then pours the beef broth.

Set the temperature to 500°F and preheat the wood pellet grill for 15 minutes with the lid closed.

Cook for 30 minutes or until the roast is well seared.

Reduce temperature to 225°F. Add the veggies and thyme and cover with foil. Cook for three more hours or until the internal temperature reaches 135°F.

Remove from the grill and let rest for 10 minutes. Slice against the grain and serve with vegetables and the pan drippings.
