  2. Cover the smoker grill rack with foil and coat with cooking spray
  3. Take a small bowl and add garlic, oregano, basil, onion powder, and season the mix with salt and pepper
  4. Take a large bowl and add sausage slices, bell pepper, potatoes, onion, olive oil, and spice mix
  5. Mix well and spread the mixture on your foil-covered rack
  6. Place the rack in your smoker and smoke for 45 minutes
  7. Serve with your French bread
