65. Smoked Pork Loin in Sweet-Beer Marinade

Combine all fixings for the marinade in a bowl.

Place the pork along with marinade mixture in a container, and refrigerate overnight.

Remove the pork from the marinade and dry on a kitchen towel.

Prepare the grill on Smoke with the lid open until the fire is established.

Set the temperature to 250F and preheat, lid closed, for 10 to 15 minutes.

Place the meat on the grill rack and smoke until the pork's internal temperature is at least 145-150 (medium-rare), 2-1/2 to 3 hours.

Remove meat from the smoker and let rest for 15 minutes before slicing.

Serve hot or cold.
