66. Smoked Pork Ribs with Fresh Herbs

Combine the olive oil, garlic, fennel seeds, parsley, sage, rosemary, salt, and pepper in a bowl; stir well.

Coat each chop on equal sides with the herb mixture.

Start the pellet grill (recommended hickory pellet) on SMOKE with the lid open until the fire is established. Set the temperature to 225 and heat up, lid closed, for 10 to 15 minutes.

Smoke the ribs for 3 hours.

Transfer the ribs to a platter and serve hot.
