71. Traeger Smoked Lamb Shoulder

Preheat the Traeger to 2250F with a pan of water for moisture.

Trim any extra fat from the lamb and rinse the meat in cold water. Pat dry with a paper towel.

Inject the cider vinegar in the meat, then pat dry with a clean paper towel.

Rub the meat with oil, salt, black pepper, and dried rosemary. Tie the lamb shoulder with a twine.

Place in the smoker for an hour, then spritz after every 15 minutes until the internal temperature reaches 1650F.

Remove from the Traeger and let rest for 1 hour before shredding and serving.
