71. Traeger Smoked Lamb Shoulder

Directions:
  1. Preheat the Traeger to 2250F with a pan of water for moisture.
  2. Trim any extra fat from the lamb and rinse the meat in cold water. Pat dry with a paper towel.
  3. Inject the cider vinegar in the meat, then pat dry with a clean paper towel.
  4. Rub the meat with oil, salt, black pepper, and dried rosemary. Tie the lamb shoulder with a twine.
  5. Place in the smoker for an hour, then spritz after every 15 minutes until the internal temperature reaches 1650F.
  6. Remove from the Traeger and let rest for 1 hour before shredding and serving.
