81. Traeger Braised Lamb Shank

Season lamb shanks with prime rib rub, then allow resting.

Get the wood pellet grill temperature set to high, then cook the lamb shanks for about 30 minutes.

Place the shanks directly on the grill grate, then cook for another 20 minutes until browned on the outside.

Transfer the cooked lamb shanks into a Dutch oven, then pour beef broth, the herbs, and wine. Cover it with a fitting lid, then place it back on the grill grate and allow it to cook at a reduced temperature of 3250F.

Brace the lamb shanks for about 3 hours or until the internal temperature gets to 1800F.

Remove the lid once ready, then serve on a platter together with the accumulated juices and enjoy.
