125. Grilled Salmon Teriyaki Sauce

  1. In a saucepan, place the soy sauce, brown sugar, ginger, garlic, orange juice, and zest. Bring to a boil and slowly boil for 1o minutes, or until a syrupy consistency is achieved, about a 50 percent reduction. Let cool completely. Add the salmon and sesame seeds and marinate for 1 hour.
  2. Remove the salmon from the marinade and bring the sauce to a boil.
  3. Place the salmon fillets straight on the grill grate, skin-side up—Cook for about 3 to 5 minutes per side, or until they are done until your liking. Occasionally, then brush the salmon with the sauce.
  4. Remove the salmon from the grill and serve topped with the toasted sesame seeds and chopped scallions.
