178. Grilled Pineapple with Chocolate Sauce

  1. Preheat pellet grill to 400°F.   
  2. De-skin, the pineapple, then slice the pineapple into 1 in cubes.   
  3. In a saucepan, combine chocolate chips. When chips begin to melt, add rum to the saucepan. Continue to stir until combined, then add a splash of the pineapple’s juice.   
  4. Add in whipping cream and continue to stir the mixture. Once the sauce is smooth and thickening, lower heat to simmer to keep warm.
  5. Thread pineapple cubes onto skewers. Sprinkle skewers with brown sugar.   
  6. Place skewers on the grill grate. Grill for about 5 minutes per side, or until grill marks begin to develop. Remove skewers from grill and allow to rest on a plate for about 5 minutes. Serve alongside warm chocolate sauce for dipping.
