JOSEPHINE’S WHIPPED CREAM

Makes enough to cover a pie or a few dollops per slice of cake.

INGREDIENTS

1 cup heavy cream, chilled

2 tablespoons confectioners’ sugar

2 tablespoons maple syrup

Zest of 1 orange

TOOLS YOU’LL NEED

Measuring cup and spoons

Microplane grater

Flour sifter

Deep metal bowl

Hand blender

Whisk

Place the bowl and all whisks in the freezer for 10 minutes.

Pour the cold heavy cream into the chilled bowl.

Beat with the hand blender till soft peaks form. Sift in the confectioners’ sugar and drizzle in the maple syrup.

Add the orange zest.

Beat with the hand blender for about 5 more seconds.

Set the hand blender aside and finish whipping with a hand whisk.
