Rich in antioxidants and vitamin C, broccoli is one of the most powerful foods to support the immune system. It also helps build strong bones and body tissue.
Serves 4
4 tbsp whole almonds, skinned and halved
800g (13⁄4lbs) broccoli, washed and cut into florets, with stems peeled and sliced
2 tbsp lime or lemon juice
4 tbsp sesame oil
salt and freshly ground black pepper
1 tsp ground nutmeg
2 tbsp finely chopped fresh mint
1. Toast the almonds in a hot, dry frying pan until they turn golden brown. Transfer to a small plate to cool down.
2. Cook the broccoli by steaming for 3-4 minutes, or boiling in very little water for 6–8 minutes, until cooked but still firm.
3. Prepare the seasoning by mixing together the lime or lemon juice, oil, salt and pepper to taste, and nutmeg using a whisk or fork. Stir in the chopped mint and drizzle the seasoning over the cooked broccoli. Sprinkle over the toasted almonds, and serve.
