Beyond its intense burst of flavor, traditional pesto has amazing beauty benefits, from the concentrated anti-inflammatory phytochemicals in the basil to wrinkle-blocking allicin in the garlic to skin-nourishing healthy fats in the olive oil and pine nuts. But pesto doesn’t have to be built the same way every time, and alternative versions can really break the mold and freshen up your cooking. To make a variation on pesto, keep the classic pesto formula intact (no cheese needed), but substitute similar ingredients for the olive oil, basil, and pine nuts. Use a flavored oil like sesame or avocado in place of olive. Replace basil with spicy watercress or arugula, beautifying kale and parsley, garlicky ramps, or a blend of your favorite greens. Swap in walnuts, almonds, cashews, or even pumpkin seeds for the pine nuts. Add unrefined salt and black pepper and pulse in a food processer until smooth. You’ll have concentrated beauty nutrition in each rich, savory bite.
