BURRATA DI BUFALA & GRATED TOMATOES

TOMATOES

4 tomatoes

1 garlic clove

80 ml (2½ fl oz/1/3 cup) olive oil

fine sea salt

black pepper

BURRATA

4 burrata di bufala, (Buffalo Mozarella)

fine sea salt

black pepper

olive oil

8–12 anchovies

12 semi-dried (sun-blushed) tomatoes

TOMATOES

Grate the tomato and garlic into a bowl. Add the oil, salt and pepper. Set aside in the refrigerator for 20 minutes.

SERVING

Place a burrata on each of four plates or bowls. Dress with a little of the tomato mixture. Season with sea salt and pepper and a little oil. Place 2–3 anchovies and 3 semi-dried tomatoes on each plate or bowl.
