DON PEDRO SUNDAE

SERVES 8

INGREDIENTS

preserved cumquats, about 50 pieces

1 litre (35 fl oz/4 cups) vanilla ice cream

2 tablespoons whisky

2 handfuls blanched almonds, toasted

Divide the cumquats between eight sundae glasses reserving 16 pieces. Divide scoops of ice cream between the glasses and drizzle 1 teaspoon of whisky over each. Top with the reserved cumquats and the almonds.

TRADITION

Now hard to find in Argentina, the Don Pedro sundae was traditionally made with ice cream, crushed nuts and whisky. At Clasico Argentina, we’ve given new life to this dish by making it with vanilla ice cream and preserved cumquats, and then sprinkling it with whisky.
