ICED MATE LEMON VERBENA & CLEMENTINE

INGREDIENTS
1.5 litres (52 fl oz/6 cups) water
3 yerba mate tea bags (from an Argentinian or health food store)
2 clementines or mandarins of choice, cut into small pieces
2 tablespoons sugar, or to taste
3 sprigs lemon verbena ice cubes
Heat the water in a saucepan and turn the heat off just before boiling point. Dip the yerba mate tea bags in the water and let them infuse for about 20 minutes. Remove the tea bags and cool.
Put the clementine, sugar and sprigs of lemon verbena in a jug. Pour over the mate tea and add some ice. Let it chill for 15 minutes in the refrigerator before enjoying.
