Cheongju (Rice Wine)

KOREAN RICE WINE IS often used in cooking, particularly in marinades and sometimes in sauces.  It is a clear alcoholic beverage with a bit of sweetness to it.  Japanese sake and Chinese Shaoxing are similar products; though do not make the mistake of substituting Japanese mirin for cheongju as it is a much sweeter product.  Also, be sure to use actual rice wine and not the “cooking wine” that can often be found in supermarkets; “cooking wine” is often heavily salted or otherwise diluted in order to make it legal to sell to the general public.
