Ssalsikcho (Rice Wine Vinegar)

RICE WINE VINEGAR IS useful to have on hand not only for Korean cooking but also for many other kinds of cooking.  It is excellent in vinaigrettes, lighter than red or white wine vinegar, and can also be used in a wide variety of marinades and sauces.  Rice wine and rice wine vinegar are not the same product: to boil it down simply, rice wine contains alcohol and rice wine vinegar does not.  And, while rice wine vinegar is less tart than its Western counterparts, it is still tarter and less sweet than rice wine.
