Kkae (Toasted Sesame Seeds)

SESAME SEEDS CAN BE found already toasted in many Asian markets, sometimes already toasted and ground.  But you can toast and/or grind sesame seeds at home with little fuss.  To toast seeds, simply heat a small pan (medium-high) and swirl untoasted white sesame seeds for about three to five minutes until they turn a light brown.  If you have an electric coffee grinder, you can also grind toasted or untoasted seeds into a powder when necessary for a recipe: just be sure to clean out the grinder well before and after each different use.  Or, you can invest in a separate small grinder for seeds and other whole spices.
