Large onggi are traditionally used in kimchi making, wherein the prepared kimchi is packed into the pot and buried in the ground to ferment. Onggi allows the bubbles created by fermentation to escape through its porous structure while keeping the food within fresh and free of spoilage. Until recent years, you could find buried crocks of onggi scattered throughout the countryside in Korea, and they still remain valuable and beautiful serving and storage vessels.
