A KOREAN MEAL WOULD hardly be Korean without rice.  This staple is omnipresent, both as a simple side and as a building block for other main courses.  Below are some simple recipes for Korean style rice and its many iterations.

Preparation

  1. Wash and rinse rice in a saucepan, swishing it around in the water to release starch, at least three times.  Drain.
  2. Put 2 ½ cups water in a pan with rice and, if you like, soak for about half an hour before cooking (this helps rice to cook evenly and quickly).
  3. Heat pan on medium-high temp, let it boil, then cover.  Switch to low temp.  Let rice steam for 15 minutes without removing the cover.  Remove from heat, let rice stand for another 5 minutes without removing the cover.  Fluff and serve.
