Ingredients
- 3 cups cooked rice
- 2 tbsps neutral oil
- ½ small onion or 1 shallot, finely chopped
- 2-3 minced cloves garlic
- ¾ pound ground beef, chicken, or pork
- 1/3 cup kimchi, chopped
- 3 cups mixed vegetables (zucchini, bell pepper, carrot, snap peas), chopped
- Oyster sauce (about 2 tbsps)
- Toasted sesame oil (about 2 tsps)
- 2 scallions, sliced
- 1 or 2 fried eggs (optional)
Preparation
- Have all the ingredients ready before starting. Heat the oil on medium-high in a large skillet, add garlic, onion and stir fry until slightly colored, 2-3 minutes. Add meat and stir fry until browned, about 5-6 minutes.
- Add kimchi as well as vegetables and stir fry for another 5 minutes. Add rice then mix everything together, cooking 5 more minutes.
- Drizzle with oyster sauce and sesame oil, and transfer to a platter. Scatter scallions over and top with a fried egg or two, if using.
