Ingredients
- Full 2 cups rice, short grain
- Neutral oil, about 2 tbsps
- 1 white or yellow onion, chopped
- ½ pound mushrooms, sliced
- ½ pound ground beef or pork
- 1 tsp toasted sesame oil
- 2 tbsps soy sauce
- 2 tsps sesame seeds
- 2 scallions, sliced
Preparation:
- Wash rice 2 or 3 times, then cover with water to soak while preparing rest of ingredients. Over medium-high heat, put oil in large skillet, then cook onion until softened, about 5-7 minutes. Add mushrooms and meat, making sure to break up any clumps of meat, until browned, 10 minutes.
- Drain rice and put in skillet, accompanied by enough water to cover by ½ inch (about 3 cups). Let this simmer for 15 minutes, then test rice for doneness. If it needs more cooking time and/or more water, adjust as necessary.
- When rice is cooked, add soy, sesame oil, and seeds, then garnish with scallions.
