Mushroom Rice

Ingredients

Preparation:

  1. Wash rice 2 or 3 times, then cover with water to soak while preparing rest of ingredients.  Over medium-high heat, put oil in large skillet, then cook onion until softened, about 5-7 minutes.  Add mushrooms and meat, making sure to break up any clumps of meat, until browned, 10 minutes.
  2. Drain rice and put in skillet, accompanied by enough water to cover by ½ inch (about 3 cups).  Let this simmer for 15 minutes, then test rice for doneness.  If it needs more cooking time and/or more water, adjust as necessary.
  3. When rice is cooked, add soy, sesame oil, and seeds, then garnish with scallions.
