Ingredients
- ¼ cup sesame seeds, toasted
- 5 minced garlic cloves
- 1 tbsp grated ginger
- ¼ cup of soy sauce
- 2 tbsps sugar
- 2 tbsps toasted sesame oil
- ½ tsp salt
- Gochugaru (optional, for a spicier version, 2 or 3 tsps)
- 1 3-4 chicken, cut into 10 serving pieces (2 wings, 2 breasts cut in half, 2 thighs, 2 legs)
- 3 scallions, sliced, for garnish
Preparation
- Grind half of the sesame seeds (set the whole seeds aside for garnish), then combine with everything except chicken and scallions. Stir in the ¼ cup of water and mix well.
- Make 2 slashes in each chicken piece to allow for the marinade to penetrate, then cover with marinade and refrigerate overnight.
- Grill over moderate heat for about 30 minutes, until charred and cooked through. Turn frequently to prevent burning and watch for flare-ups. Alternately, roast the chicken in for thirty minutes at 450 degrees, turning once. Garnish with scallion and reserved sesame seeds.
