Ingredients
- 1 medium zucchini
- 1 tbsp neutral oil, such as canola
- 2 cloves of garlic, minced
- 3 tsps fish sauce
- 1 tsp toasted sesame oil
- 1 scallion, minced
- 1 tsp sesame seeds, preferably toasted
Preparation
- Slice zucchini in half lengthwise, then in ¼ inch slices crosswise, to create half-moons.
- Heat tbsp of oil over medium-high heat in saute pan. Toss in zucchini, garlic, and fish sauce and cook for 4 minutes.
- Stir in the sesame oil, scallion, and 2 tbsps of water and continue cooking for another 2 minutes, until zucchini softens.
- Sprinkle with sesame seeds and serve.
