Preparation

  1. Cut the cucumbers into half-moon shapes (no need to de-seed them if using Kirby or English cucumber).  Toss with salt and let sit for at least 5 minutes in a strainer.  Squeeze dry before continuing.
  2. Heat neutral oil on medium-high temp, toss in cucumbers, garlic, and scallion and stir fry for 2 minutes.
  3. Off heat, sprinkle with sesame oil and seeds.
