Ingredients
- 3 Kirby cucumbers or 1 English cucumber
- 1 ½ tsps salt
- 3 tsps neutral oil
- 1 minced clove garlic
- 1 minced scallion
- 1 tsp each of toasted sesame oil and sesame seeds
Preparation
- Cut the cucumbers into half-moon shapes (no need to de-seed them if using Kirby or English cucumber). Toss with salt and let sit for at least 5 minutes in a strainer. Squeeze dry before continuing.
- Heat neutral oil on medium-high temp, toss in cucumbers, garlic, and scallion and stir fry for 2 minutes.
- Off heat, sprinkle with sesame oil and seeds.
