Pancake Dipping Sauce

KOREAN PANCAKES ARE typically served with a basic soy dipping sauce.  To make, combine equal parts soy sauce, water, and rice vinegar and half part sugar (so, for example, 4 tbsps soy, water, vinegar to 2 tbsps sugar).  The sauce can be enhanced with any number of flavors should you wish to embellish: add some sliced scallion and/or minced garlic for pungency; thinly sliced green or red chili or some gochugaru for heat; and/or some toasted sesame oil or sesame seeds for nuttiness.
