Preparation

  1. Blanch spinach in boiling water, lightly salted, for about 45 seconds, then drain and shock in a bowl of ice water.
  2. Let cool, then drain and squeeze out excess water.  Chop spinach roughly, then add remaining ingredients.  Let meld for about 10 minutes for optimum flavor.
